1. Solid-state fermentation
Solid fermentation is the traditional production mode of famous liquor in China, that is, solid ingredients, fermentation, steamed grain distillation of liquor production mode. Among them are Daqu, Xiaoqu and Bran Qu liquor.
2. Semi-solid fermentation
Semi-solid fermentation refers to the use of solid saccharification, liquid fermentation distillation of liquor production methods. China's rice-flavor liquor and soy-flavor liquor are typical semi-solid fermentation wines.
3. Liquid fermentation
Liquid fermentation is the use of alcohol production methods, that is, liquid ingredients, liquid saccharification, liquid fermentation and distillation of liquor production methods. At present, this kind of liquor is relatively rare in our country.
